varietal honey differences

The color of honey is directly related to the nectar sources from which the bees have gathered. In 2024, our Early Harvest represents nectar sources that were in bloom through the first week of May. It is lighter in color, lighter in taste – with floral tones. Another harvest in mid-May is still considered light. At the end of May we pulled a third harvest and were pleasantly surprised to find a nice amber honey, (nectar sources being blooms from the month of May). Our last 2024 harvest in early July resulted in dark honey. The dark batch has a rich, earthy flavor, and so dark indeed, we had to revisit our labeling approach!

Each of these from the same hives and such a diversity of flavor – but all delicious!
